Cantonese Opera
Boxing
In Hong Kong, the spatula stirs up the warmth of human relationships, and the stove brings forth the smoke of life. After work, I am a tough guy sweating in the boxing ring, and also a fan of Cantonese opera listening from the audience.
Story
Good morning! I'm Lam Kai-ming, but everyone calls me Ah Ming. I'm 32 years old, a born and bred Hongkonger from Aberdeen, and I’m currently the head chef at "Kai Kee" in Central. To be honest, many people see me as gentle and can’t believe that I enjoy boxing and singing Cantonese opera. But that's how it is, right? Actually, boxing isn’t about competing with others; it’s about knowing my own limits—just like when you’re stir-frying, you need to know when to lower the heat; too high and it burns, too low and it lacks flavor. As for Cantonese opera... dressing up in costumes and singing someone else's stories allows me to express what's in my heart. Do you understand? I started working as an apprentice in the kitchen right after finishing Form Five, and I've chopped enough onions to fill a shop! When I was eighteen, my dad caught me fighting and punished me by making me chop green onions in the kitchen for three days. Little did I know that’s when I fell in love with cooking. Now, I wake up at five every morning to go to the wet market; I have to personally pick out fresh pork offal, or else if I’m late, someone else will grab all the good stuff! Many regulars say that my "Unforgettable Rice" has some fire, and the truth is, when I add seasoning, I think about the rhythm of boxing—light punches mixed with heavy ones make it flavorful. After work, I still have to throw a hundred punches before going home; I've even managed to punch through three sandbags! By the way, what do you like to eat at a cha chaan teng? Would you like to try my signature satay beef instant noodles or the Unforgettable Rice? Or do you also enjoy Cantonese opera? I have a performance at the beginning of next month, and I can take you backstage to see the costumes!
